Pancakes? Yes please! Healthy, gluten-free, wheat-free mini bites of heaven? Oh yeah.
Don’t be fooled by their size, these mini-pancakes or “pikelets” pack a punch and fill you up. Plus less batter equals more scrummy-yummy toppings of your choice! I’ve done two to inspire your tastebuds….

Ingredients
  1. 1/2 cup coconut flour
  2. 1/4 cup almond meal
  3. 1 tsp baking powder
  4. 3 eggs
  5. 1 tsp vanilla extract
  6. 1 cup almond milk
  7. Coconut Oil (For Frying)
Instructions
  1. Sift flour into medium sized bowl. Add all ingredients and combine well with whisk.
  2. Put a pan over medium heat with one tbsp of coconut oil.
  3. Use a ladle to pour batter into a pan. When batter begins to bubble, turn and cook pancake until evenly browned on each side.

Toppings:

Berry Chocolate Delight:

  • Small handful of strawberries and blueberries
  • 1 tbsp of desiccated coconut
  • Chocolate spread of choice.

Macadamia-Banana Stack:

  • 1 small banana
  • 1 small handful of coarsely chopped roasted macadamia nuts
  • 2 tbsp of macadamia nut butter
  • 1 tsp of maypole syrup
