Hey healthy beauties! Here’s another recipe for you all – this time a lunch/dinner recipe, since my last posts have been breakfast orientated. This Bowl is perfect for getting in your daily dose of veggies as the cauliflower “rice” acts as the base of this dish. It’s really delicious and filling and your mind can be set at ease that you’ve put good, nutritious food into your tummy! Can also be easily adjusted for any vegetarians or pescetarian by changing the protein.

For Beans & "Rice"
  1. 2 cups Grated Cauliflower (Completed using food processor)
  2. 1/2 cup white beans
  3. 1/2 cup red beans
  4. 1 medium onion, diced
  5. 2 cloves of garlic, sliced
  6. 1/2 tsp cumin
  7. 1/4 tsp cayenne pepper
  8. Himalayan Salt
  9. Pepper to taste
  10. Olive Oil
For Bowl
  1. Roasted Vegetables (1 Capsicum, 1 Red Onion, 3-4 small Tomatoes)
  2. 1/2 Grilled Chicken
  3. 1 Avocado, cubed
  4. Fresh Coriander
  5. Fresh Shredded Cheese
  6. 3 tbsp Calamanci Juice
Cauliflower Beans & Rice
  1. Heat 1 tbsp olive oil on a medium heat.
  2. Add and sauté onions and garlic for about 3 minutes.
  3. Add cauliflower, spices, salt and beans. Cook through for 3-5 mins until fragrant.
  4. Set Aside.
Bowl
  1. Use the "Rice and Beans" as the base and add any or all toppings into bowl.
