Ingredients
  1. 2 cups whole wheat flour
  2. 1 tsp baking powder
  3. 1 tsp baking soda
  4. 1/2 tsp salt
  5. 1/2 tsp ground cinnamon
  6. 1/2 cup coco-sugar (or brown sugar)
  7. 4 large ripe bananas, mashed
  8. 1/4 cup coconut oil
  9. 1/2 cup almond milk
  10. 2 tsp vanilla extract
  11. 1 cup blueberries, thawed if frozen
Instructions
  1. Preheat oven to 175 degrees C and grease muffin tin.
  2. Mix all dry ingredients in large bowl i.e. flour, baking soda, baking powder, cinnamon, sugar and salt. Set aside.
  3. Combine all wet ingredients in a medium sized bowl i.e. bananas, coconut oil, almond milk and vanilla extract.
  4. Add wet mixture to dry ingredients in large bowl and fold until just combined. Do not over-work. This ensures a lighter, fluffier batter!
  5. Spoon batter equally into muffin tin. Place into oven and bake for 25 minutes or until a skewer can be poked into the middle of the muffin and come out clean.
  6. Allow to cool for 5 mins before placing onto wire rack.
