Ingredients
- 8 fresh eggs
- 4 chorizo sausages, sliced
- 1 white onion, peeled and diced
- 2 cloves garlic, peeled and chopped
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1 can of chick peas, drained
- 1 can of tomatoes
- 1/2 tsp ground cumin
- 1 tbsp chilli flakes
- 2 tsp fresh greek yogurt
- handful fresh parsley
- olive oil
- ground pepper
- bread (optional)
Instructions
- Preheat oven to 200C
- In a hot pan, fry sliced chorizo (no need for oil) for about 5 minutes - turning regularly - until cooked through. When done, set aside.
- Meanwhile, warm olive oil in a large pan over a medium heat. Add onion, garlic and peppers and let them sweat for about 5 minutes, cooking until soft. Add cumin and pepper to taste to pan, stirring well. Add canned tomatoes and let mixture cook for a further 5-10minutes or until the liquid has evaporated to leave a thick, saucy consistency. Taste and season to taste.
- Dispense the whole mixture evenly into 4 oven-proof ramekins.
- Break eggs on top of ramekins: two eggs into each. Scatter chorizo on top of ramekins.
- Place ramekins in oven and bake for 5-10 or until eggs are cooked to your liking.
- Remove ramekins and serve with greek yogurt, fresh parsley and chilli flakes as garnish. Serve with crusty bread.
