Ingredients
  1. 8 fresh eggs
  2. 4 chorizo sausages, sliced
  3. 1 white onion, peeled and diced
  4. 2 cloves garlic, peeled and chopped
  5. 1/2 red pepper, chopped
  6. 1/2 yellow pepper, chopped
  7. 1 can of chick peas, drained
  8. 1 can of tomatoes
  9. 1/2 tsp ground cumin
  10. 1 tbsp chilli flakes
  11. 2 tsp fresh greek yogurt
  12. handful fresh parsley
  13. olive oil
  14. ground pepper
  15. bread (optional)
Instructions
  1. Preheat oven to 200C
  2. In a hot pan, fry sliced chorizo (no need for oil) for about 5 minutes - turning regularly - until cooked through. When done, set aside.
  3. Meanwhile, warm olive oil in a large pan over a medium heat. Add onion, garlic and peppers and let them sweat for about 5 minutes, cooking until soft. Add cumin and pepper to taste to pan, ย stirring well. Add canned tomatoes and let mixture cook for a further 5-10minutes or until the liquid has evaporated to leave a thick, saucy consistency. Taste and season to taste.
  4. Dispense the whole mixture evenly into 4 oven-proof ramekins.
  5. Break eggs on top of ramekins: two eggs into each. Scatter chorizo on top of ramekins.
  6. Place ramekins in oven and bake for 5-10 or until eggs are cooked to your liking.
  7. Remove ramekins and serve with greek yogurt, fresh parsley and chilli flakes as garnish. Serve with crusty bread.
